A cup of coffee can’t save the world.
But it can be the beginning.
Tatendurst is a regenerative food project on wheels – a mobile café. We combine the logic of the circular economy with the wisdom of nature.
Rescued food becomes snacks, leftovers become compost, and soil becomes blooming green oases.

Why Tatendurst?
What causes more emissions than all airplanes combined?
- 1.3 billion tons of food are wasted every year.
- Over 6% of global greenhouse gases come from this waste.
- The global economy loses €870 billion – while 345 million people starve.
Tatendurst wants to change that – one rescued zucchini at a time.
🚀 Our Crowdfunding Campaign is LIVE!
Starting now, you can support us and be part of our mission! Every contribution—big or small—helps us combine good coffee and circular economy
Please share the campaign with your friends, family, and colleagues—together, we can make a difference! 💙

Too much of a good thing?
Welcome to the linear food system:
We take. We produce. We throw away.
What’s left? A mountain of food, waste, and missed opportunities.
And right in the middle: us – caught between abundance and garbage.
Time to rethink?
Tatendurst is taking the first step. 🌱
Circularity instead of chaos
Imagine if waste wasn’t waste –
but the start of something new.
In a circular system, nothing is simply discarded – it’s reimagined, reused, repurposed:
Old bread becomes a fine snack.
Packaging becomes compost.
Coffee grounds become flower soil.
From waste: Value. That tastes good.

How Tatendurst works:
Monday, 6 p.m.: Surplus vegetables are picked up from “Freche Früchtchen.” From that we create zucchini quiche, carrot muffins, herbal tea & lemonade.
Tuesday, 9 a.m.: Tatendurst is parked at Heinlenstraße. The flowerbeds by the mobile café bloom – enriched with Tatendurst compost. Cups steam – the week begins in circular flow.
Leftovers are passed on – today to the forest kindergarten. The local sports club ordered for their next match.
Wednesday, 11 a.m.: Peels, stems & coffee grounds go into the compost. In the evening, the Braun family brings their apple & herb treasures.
Tomorrow? New ingredients, new ideas – and the compost workshop is already waiting.
What happens when we close loops together?
- A city like Tübingen could save over 50 tons of food every year.
- 100 households could produce 15,000 liters of fertile soil.
- A network of cafés, kindergartens & sports clubs could nourish entire neighborhoods.
- What grows here can take root anywhere.
Tatendurst is not just a café – it’s a model for transformation.

Change begins with a snack.
What begins as a mobile café grows into a living model:
Rescued food becomes snacks, leftovers become compost, soil becomes green oases.
A food truck? Almost.
A place where zucchinis are saved, snacks are invented, soil is revived, and knowledge is shared? That’s more like it.
A system you can touch, shape, and rethink? Exactly.

Born between cornfields and thunderstorms in the American Midwest, I’ve been on the road since 1998 – from Timbuktu to the Neckar River. I love languages (not just human ones 🌱), have studied the brain, explored behavior – and learned to love the soil.
My favorite gardening tool?
A simple fork – perfect for gently lifting out weeds.
As a child…
I loved toads, snakes, and was often alone outdoors – nature was my playground.
Perfectionism meets Tatendurst:
I’m learning to appreciate the imperfect – Tatendurst is my attempt to love the overlooked.
Because change needs action.
In a world in flux, I decided not to stand still.
Instead of helplessness: movement. Instead of waiting: action.
It’s time. I’m taking the first step – not perfect, but with a thirst for action (= „Tatendurst“).
With heartfelt Tatendurst-thanks to our supporters:
